Donna Hays Buckwheat Banana Bread

I love trying out new recipe’s, some times I change them around to suit my wants or needs but sometimes they are perfect as they are and don’t get changed at all, this is one of those recipe’s, I absolutely love this banana bread. Donna Hay has thousands of amazing recipe’s, this is one that I have returned to over and over again so I think that its one you will all enjoy just as much as me. It is nice and easy to make and lovely and soft, plus buckwheat is gluten free.

What you’ll need

1 1/2 cups buckwheat flour

1 cup of coconut sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

2 teaspoons ground cinnamon

3 bananas really ripe

1 egg

1/2 cup of greek style yogurt

1/4 cup of oil

1/3 cup of maple syrup

2 teaspoons vanilla bean paste or extract


Prep

Preheat Oven to 160c

Line a bread tin with baking paper.

Place the flour, sugar, baking powder, baking soda and cinnamon in a large bowl and mix to combine.

Add the mashed banana, egg, yoghurt, oil, maple syrup and vanilla and mix to combine.

Pour into the tin.

Bake for 1 hour or until cooked when tested with a skewer.

Allow to cool in the tin for 5 minutes before transferring to a wire rack to cool.

Brush the top with a little extra maple syrup prior to serving.
