Raw Caramel Slice Bites

Raw Caramel Slice, 1 Eighty Kitchen

These tasty little bite sized treats are so good you could mistake them for a naughty treat, but they are made out of all natural ingredients, making them naughty tasting but oh so much nicer for you. I find they work best when made in little silicone cup cake trays but if you don’t have one of these then use small parties cases or make as one big slab and cut up into little blocks.

What you’ll need

1/2 cup of almonds or any nut of choice

13 medjool dates pitted

1/4 cup of desiccated coconut

1/2 cup of macadamia raw

1/3 cup of pure maple syrup plus 2 tablespoons

1 teaspoon of vanilla extract

pinch of salt

1/3 cup of coconut oil

1/3 cup of raw cacao powder


Prep

Make Base Layer

Combine the almonds, coconut and 6 of the dates to a food processor and blitz till crumbly.

Spoon mixture into 24 mini muffin holes.

Press down firmly and pop into the freezer.

Make Filling

Combine the macadamia nuts, maple syrup, vanilla, salt and the remaining 7 dates in a food processor and blitz till smooth.

Spoon the mix on top of the bases and smooth the top over with the back of a teaspoon.

Return to the freezer to set for approx 30 minutes.

Make Choc Top

Melt the coconut oil with the 2 extra tablespoons of maple syrup, remove from heat and whisk in the cacao powder(if your a little caffeine sensitive then just plain cocoa will work better), leave to cool.

Then pour over the top of your bites and place back in the freezer. ideally overnight to set.

Once set you can pop them out of the silicone, but best kept in an airtight container in the freezer.

Take out just before you want to eat.
