Buckwheat Noodles with Asian Greens

This is a nice fresh light dinner that doesn’t take very long to whip up.

Leftovers

Soba noodles are quite substantial making this a great meal for leftovers.

What you'll need

1 packet of buckwheat soba noodles

1 packet of edamame beans shelled

1 bunch of broccolini

1 bunch of bok choy

1 bunch of choy sum

1 packet of firm tofu

1 small knob of ginger

Fresh red chilli

2 tablespoons sesame oil

From the pantry

soy sauce

crispy golden shallots

1 teaspoon black sesame seeds

salt and pepper

Optional Extras for Lunch

1 block of tofu


Prep and Cook

Place a large pot of water on to boil with approx. 2 litres of water

Preheat oven to 180c

Marinate tofu

Cut your tofu into nice bite sized squares and place in a mixing bowl.

Peel and then grate your ginger into the tofu.

Generously splash soy sauce over and mix all together.

Set aside.

Prep veggies

Take stalks off your bok choy, choy sum and broccolini.

Finely slice chilli.

Cook tofu

Use your hands or a spoon to remove the tofu from the marinade and place it on an oven tray lined with paper.

Place in the oven and bake for 8 minutes.

Keep the marinade in the bowl and add the sesame oil and mix well.

Cook noodles

Soba noodles often come in bunches so drop noodles into the pot a bunch at a time, making sure to swirl them so they don't stick together.

Cook for 4 minutes.

Strain noodles and then toss them in the pot with the soy marinade, sprinkle with sesame seeds and season with salt and pepper if you think they need it.

Blanch veg

Drop all the veg into the pot at the same time and cook for 1 minute.

Strain and then sprinkle with sea salt.

Add veg to the noodles and toss well.

Serve

Place the noodle mix in individual bowls, your tofu can get sprinkled over top, then garnish with the crispy shallots and fresh chilli

Pretty presentation

Start by taking a bulk amount of just noodles and pile it into the middle of your plate, then scatter the greens around the outside, dot pieces of tofu around, then finish with the golden shallots and carefully placed chilli.
