Cauliflower Pizza Base

I absolutely love pizza in any shape and form - who doesn’t love a good Margarita? This one, while simple in toppings, is a great way to get more veg into the diet…delicious!!!
Leftovers
There is a little bit more effort required in getting your leftovers as it requires time cooking up extra pizzas, but it’s worth it right?
Make your own almond meal
Store bought almond meal is sooo expensive! If you already have almonds in the house (which we always do...I buy mine from Aldi as they are half the price of anywhere else)then why not make your own? Ground them up in the food procesor,skin and all. They might not come up as fine as the packet stuff but a little texture works well in the cauliflower.
What you'll need
3/4 of your cauliflower
1 cup almond meal
3 eggs
A pinch or two of dried herbs - either thyme, rosemary, oregano or mixed herbs (but not essential)
1 cup of grated Parmesan cheese
1 x 140g Leggo’s (or similar) pizza sauce
100g black pitted kalamata olives
2 cups grated cheese - tasty or mozzarella
1/2 radicchio lettuce (optional) or baby rocket
1/4 bunch basil
1 tub fresh mozzarella
From the pantry
sea salt
For the meat eaters, chorizo adds great taste to this pizza.
Prep and Cook
Pre heat oven to 200c
Make pizza bases
Cut your cauliflower up into florets then, working in batches, blitz in a food processor till you create a fine crumb.
Remove each batch of cauliflower and put into a large mixing bowl.
Add your grated parmesan, almond meal, pinch of dried herbs and season well with salt and pepper.
Lightly whisk your eggs and add them to the cauliflower mix, working it till everything is really well combined.
I’m using pizza trays but if you want to save time (or don’t have them) then a large flat oven tray will work, you just might be making one large rectangle instead of 3 rounds.
Line your tray with baking paper.
Spoon 1/3 of the cauliflower mix out onto your pizza tray.
Use your hands to evenly spread out the mix, pressing it into a nice not too thick round. This may take some patience as it can be a bit crumbly. A wet hand also helps. (I only have the one pizza tray so I make one pizza at a time, eating while we go).
Place the base in the oven to cook for 15 minutes (20 if you are doing one large one).
Remove the base from the oven and spread over with a generous tablespoon of pizza sauce.
Sprinkle with grated cheese and a scattering of olives, and a light sprinkling of sea salt then return to the oven for 10 minutes.
Meanwhile…
Pick your washed basil leaves and rip up helathy bite sized pieces of the radicchio lettuce.
Top with mozzarella
Rip half your mozzarella up and dot it across the top of your pizza then return to the oven for another 5 minutes.
Scatter leaves
Once cooked, transfer the pizza onto a cooling rack so that it doesn’t sweat and scatter over the top with your picked basil and radicchio.
Press your next pizza base out and pop it into the oven to start cooking while you eat, then repeat all steps…except you won’t be putting any fresh mozzarella onto your lunch pizza.

You can go fancy if you want but I keep the lunch pizza quite basic and only do sauce and cheese. It’s not so good microwaved but would be fine cold or put in a sandwich press.
