Lamb Burgers with Pickled Carrot, Minted Yogurt and Hummus

This is not a burger that you can easily put down; they are incredibly messy to eat but seriously tasty. If you aren’t so keen on the struggle of wrapping your mouth round a giant burger, then you might want to make smaller patties and have 6 in total instead of four.
Leftovers
There are enough buns to have these as an exact replica tomorrow or you could go for a bunless version and use up all the rocket and make a larger salad.
What you'll need
500g lamb mince
1/2 brown onion
1 garlic clove
1 egg
1/3 cup of quick oats
1 bunch of parsley
1/2 bunch of mint
3 carrots
1 tablespoon apple cider vinegar
1 cucumber
3 tablespoons of greek yoghurt
1 small tub of hummus
4 multigrain bread rolls
1/2 a packet of baby rocket
From the pantry
olive oil
salt and pepper
2 teaspoons mayo or Vegenaise
2 teaspoons paprika
1 teaspoon cumin powder

Lentil Pattie:
1 tin lentils
1/2 brown onion
2 eggs
coconut flour
chopped parsley
Prep and Cook
Pickle Carrots
Peel and grate carrots and toss through the apple cider vinegar.
Season with salt and pepper and set aside. Stir occasionally.
Make Yoghurt
Dice cucumber up small and mix with the yogurt.
Peel and crush garlic and add to the yoghurt.
Roughly chop half of the mint leaves and mix this through with salt and pepper.
Make Patties
Peel and finely dice the onion.
Finely chop the remaining mint and half the parsley and combine in a mixing bowl along with the onions, mince, cumin powder and paprika, egg and oats. Season well with salt and pepper and mix till well combined (I use my hands for this).
Mould into 4 large patties, slightly larger than the shape of your bun. ( make 6 if you want them more manageable to eat).
Heat a large frypan on a medium heat with 1 tablespoon of oil.
Cook each side for 4 minutes.
Rest for at least 3 minutes.
When resting, if you remove them from the pan they will cool down and require a quick flash to bring the heat back up, if you rest them in the pan they will hold their heat, but they will also continue to cook a touch so this isn’t good for medium-rare die hards.
Medium rare or well done?
Cooking instructions are just a guide but If you like a medium rare pattie then cook for 3 minutes each side and if you want well done then go for 5 minutes each side. Always check how it looks before you rest them to make sure they are cooked to your liking.
Plate it Pretty
Chop the remainder of the parsley and mix through the carrot with a splash of olive oil.
Slice buns in half and lightly toast.
Spread the top and bottom with a touch of mayo, then on the base generously baste with hummus, then a handful of the rocket a large handful of carrots, top with a pattie. Mix yoghurt well and place a generous spoon on the top bun and sandwich altogether.
Best eaten with your hands.

Deconstructed burgers. You could have more of a burger salad if a full blown cold hamburger isn’t your jam. But even if you are going with the burger for lunch you might want to travel everything deconstructed so that you don’t make your buns soggy.
