Lamb Kofta Wraps (the cheat's version)

I like to think we all have days when dinner time can be a bit of a scramble. This dish came about one night when I had planned to make one of our favorite meals but I had been chasing my tail all day and ran out of time so instead had the ingenious idea to not make the koftas and instead I just fried the mix up. Success.
This is a great dinner if you wanted to have a super easy picnic somewhere with a view. I like to mix things up a little and try to not be set on the idea of only eating dinner at the table.

Are exactly the same, just roll and wrap ready for tomorrow.
Add all sorts
You can add all kinds of yummy extras - cheese, tomato, chilli sauce, garlic aioli - the list is endless.
What you'll need
500g lamb mince
2 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1/2 bunch of coriander
1 teaspoon salt
1 packet wholemeal Lebanese bread ( i prefer the medium size, large tends to feel like your eating all bread and no filling)
1 store bought hummus
1 store bought beetroot dip
1 avocado
2 carrots
couple of handfuls of baby spinach
From the Pantry
greek yoghurt
sea salt and pepper
olive oil

Quorn mince
Prep and Cook
Prep Fillings
Peel and slice carrots into thin matchsticks (or use a grater if that is easier).
Peel and mash avocado with some salt and pepper.
Cook Meat
Use a large non stick fry pan and on a high heat warm up some olive oil then fry half your meat up with 1 teaspoon of paprika and a good pinch of salt and pepper.
Remove from pan when almost slightly crispy and place on a dish.
Fry the second half of your mince along with 1 teaspoon of paprika, the cumin and cinnamon.
Add your first batch back into the pan and work the meat until it’s lovely and hot.
Sprinkle with freshly chopped coriander.
At the Same Time
Heat a new pan up to high with a touch of oil.
Fry off your bread for roughly 10 seconds on each side.
Fill
Spread some yoghurt across your Lebanese bread.
Then a heaped tablespoon of hummus. and beetroot dip along beside each other lengthways.
Sprinkle with a handful of rocket and spinach down the centre then scatter some carrot down the centre and top with meat.
Lastly a large spoonful of avocado.
Roll.
