Lentil Nachos

Time: 30 minutes
Often when I’m eating super clean I still like something that feels a little naughty so this is a very stripped back version of nachos, minus the meat, the cheese, the sour cream and just a small serve of corn chips. Plus it is the perfect place to use up the other half of the Chile con carne seasoning.
Leftovers
While this mix isn’t enough to feed four it would still provide a small portion of the lentil mix for leftovers, but to make it more substantial I have added an extra tin of lentils to your list.
What you'll need
1/2 red onion
4 cloves of garlic
3 sprigs of oregano
1/2 packet of chile con carne seasoning
1 tin of whole peeled tomatoes
4 zucchini
1 tin of brown lentils
1 packet of corn chips ( 1 chose Mission white corn chips)
2 avocados
1/2 lemon
1 red pepper
1 green pepper
From the Pantry
olive oil
salt and pepper
Feeding Four
I have added an xtra tin of lentils and tomatoes plus given you two more zucchini and an xtra avocado.
Prep and Cook
Prep Lentils
Peel and finely dice half a red onion and 4 cloves of garlic, wash and roughly chop the oregano and saute everything together in a large pot with a little olive oil. Add the chile seasoning and cookout for 1 minute.
Add the whole peeled tomatoes squashing them as you go, then swill out the can with approx 1/2 a can of water and bring up to the boil.
Finely dice the zucchini and add to the tomato mix.
Once your tomato sauce has thickened up add the lentils and season with salt and pepper and turn down to a gentle simmer.
Smash Avocado
Cut the avocados in half and remove the stones then scoop the flesh into a small bowl along with the juice of half a lemon, season well and mash up with a fork.
Plate it Pretty
Dice the peppers up nice and small.
Scoop the lentil mixture into bowls and scatter the diced peppers over the top in a crescent-like shape. Scoop a large spoonful of the avocado and place on the top point of the peppers.
Garnish with corn chips on the side and a sprig of oregano.

If you wanted to you could use the leftovers up in the last of the wraps from the other night, or add the xtra’s from the list and make lunch exactly the same.
