Nutty Brown Rice Salad with Roasted Cumin Seeded Carrots

Spices are a fabulous way of getting flavour into a meal without the added calories. Cumin seeds are up there as one of my fav’s and work wonderfully on roasted veggies. This salad doesn’t have loads of ingredients but has a lovely balance of flavours, the brown rice will help to keep you feeling fuller as it is high in fibre but still low in calories. If your worried about the feta don’t be, everything in moderation is good and feta is one of the healthier options in terms of fat and calorie count for a cheese so enjoy this one xx
Leftovers
Lunch tomorrow is the exact same as dinner.
What you'll need
2 cups of brown rice
4 large carrots
2 sticks of celery
1/4 cup of almonds
1/4 cup of pumpkin seeds
1/2 bunch of mint
1 tablespoon of currants
120g Danish feta
1 lemon
From the Pantry
1 teaspoon of cumin seeds
olive oil
salt and pepper
Prep and Cook
Preheat Oven to 200c
Cook Rice
Place the brown rice in a large pot with at least six cups of cold water and a large pinch of salt, bring up to the boil and cook for approx 20 minutes until the rice is al dente.
Cook Carrots
Leaving the skin on the carrots, slice the ends off them and slice each carrot in half lengthways. Then chop the carrots in a triangular shape and toss them in a bowl with a little olive oil, some salt, pepper and the cumin seeds. Spread out on a baking tray lined with paper and roast in the oven for 15 minutes so the carrots are softened but still crunchy.
Once cooked remove from the oven.
Toast Nuts and Seeds
Spread your almonds and pumpkin seeds out on a tray and pop into the oven to roast for 7 minutes, remove from the oven and allow to cool.
Plate it Pretty
Pick the mint leaves ripping each one into about 3 bits.
Wash celery and slice on a diagonal.
Crumble feta.
Combine the rice with the cooked carrots, celery, toasted nuts and seeds. Mix through the mint and the currants and season well with salt and pepper. Squeeze over the fresh juice of a lemon and mix all together.
Gently mix through the feta then spoon generously into serving dishes.

Tomorrows lunch is exactly the same as dinner but I would recommend you give this one a zap in the microwave to heat up the rice as it goes pretty hard in the fridge.
