Turkey San Choy Bau

I am a real big fan of san choy bau, I love the freshness of the lettuce paired with the juicy oily fats from the mince. You can literally make san choy with any type of mince, although it’s not traditional it still works. I even recently made it with prawns but tonight it is a very simple stripped back version just with turkey mince, garlic, onions and ginger. Turkey is a very lean meat so to juice it up you have to add the lemon juice for some moisture and a nice light kick of flavour.
Leftovers
You won’t get many leftovers from this meal, because it is very light I find you can easily eat the whole lettuce and 500g of meat between two people. So add one of my favourite lunches the stuffed avocado to your shopping list.
What you'll need
1 iceberg lettuce
1 small red onion
2 cloves of garlic
1 thumb sized piece of ginger
500g of turkey mince
1 lemon
1 lime
1 long red chilli
From the Pantry
1 teaspoon of sesame oil
1/2 a teaspoon of black sesame seeds
salt and pepper
Feeding Four
You should have plenty of lettuce, but I have added more mince, garlic, lemons and limes to the feeding four shopping list.
Prep and Cook
Prep Lettuce
Cut the heart out of the iceberg by making 4 deep cuts around the base in the shape of a heart, then put the plug into a clean sink and hold the iceberg under the running water so that the water flows into the area that you have cut. What this does is it fills the leaves with water and makes them heavy so they easily pull away. Then drop them into the sink of water to wash.
Cook Mince
Peel and dice the onion, finely chop the garlic and peel and grate the ginger.
Heat a large frypan with 1 teaspoon of sesame oil and saute the onion, garlic and ginger until soft.
Add the turkey mince to the pan and fry until everything is well cooked.
Season well with salt and pepper.
Squeeze over the lemon juice and half of the lime juice.
Plate it Pretty
Roughly chop the red chilli.
Arrange the lettuce leaves on a large serving platter.
Place the turkey mince in a small bowl and scatter over the fresh chilli and sesame seeds.
Serve with lime wedges.

Lunch tomorrow
This is one of my favourite lunches you just mix the tuna with corn and celery and a little mayo, but at the moment I am leaving the mayo out and just using some fresh lime juice instead with some of the oil from the tuna.
