Watermelon Basil and Feta Salad

Time: 15 minutes

When you spend so much time cooking and I guess so much time eating, I often don’t feel like a conventional dinner. It has been super muggy and in light of the fact that we (being me) have been gorging ourselves in the festivities, tonight I just wanted something fresh. Lucky for me my husband will happily eat salad for dinner, but inevitably will be in the kitchen eating toast within an hour, so if you aren’t feeling like a light dinner and want more of a meal then you could pair this salad with some cold cooked prawns and some boiled baby potatoes. But for me, this is perfect on a hot summer night!

Leftovers

Tonight won’t be a leftovers night so if you aren’t on holiday and need some lunch options then maybe a ham salad sandwich.

Leftover Persian Feta?

Options are endless for leftover feta but my two main go to's are crumbled over scrambled eggs or on smashed avo on toast.

 

What you'll need

1/4 watermelon

1/2 bunch of basil

1 Lebanese cucumber

1/2 tub of Persian feta

From the Pantry

balsamic vinegar

salt and Pepper

Prep and Cook

Prep Salad

Peel/cut the skin off the watermelon.

Cut watermelon into chunky squares.

Peel cucumber and slice in half then in quarters lengthways. Slice each quarter into triangles.

Wash basil and pick just the leaves.

Plate it Pretty

To make a salad look pretty I often build them rather than toss and because the watermelon is delicate this is totally a build salad.

Spread roughly a third of the watermelon across the base of your bowl. Scatter over some cucumber and then some of the fresh picked basil. Crumble over the feta and give a light sprinkle of salt and pepper.

Repeat with another layer and continue like this until you have used up all of your ingredients.

Just before you are ready to eat, finish with a generous drizzle of balsamic vinegar over the salad.
