Scrambled Eggs with Avocado, Rocket and Hot Sauce

Just a slight variation on last weeks eggs, today I have added avocado and some rocket with a splashing of Cholula hot sauce, great for breakfast or lunch when you're in a hurry.

What you’ll need

4 eggs

3 tablespoons of milk (any kind) or water

2 large handfuls of baby rocket

1 avocado

From the pantry

1/2 teaspoon olive oil

1 teaspoon of cholula hot sauce

salt and pepper


Prep and Cook

Cook Eggs

Crack your eggs into a small bowl, add the milk and season well then whisk well to combine.

Heat 1/2 a teaspoon of olive oil in a small omelette pan, when the pan is just about smoking gently add your eggs, you want them to make a nice sizzle when they touch the pan.

Use a spatula to quickly work the eggs around the pan till they are lightly cooked, then slide out of the pan onto plates and top with a handful of baby rocket, half an avocado and some hot sauce. Crack some pepper over the avocado and eat straight away.
