Scrambled Eggs with Baby Spinach

Scrambled eggs are a perfect easy meal that I eat regularly simply because I almost always have eggs in the fridge and they are just so easy to make and also really easy to eat in a hurry.

What you’ll need

4 eggs

3 tablespoons of milk (any kind) or water

2 large handfuls of baby spinach

From the pantry

1/2 teaspoon olive oil

salt and pepper


Prep and Cook

Cook Eggs

Crack your eggs into a small bowl, add the milk and season well then whisk well to combine.

Heat 1/2 a teaspoon of olive oil in a small omelette pan, when the pan is just about smoking gently add your eggs, you want them to make a nice sizzle when they touch the pan.

Use a spatula to quickly work the eggs around the pan till they are lightly cooked, then slide out of the pan onto plates and top with a handful of baby rocket.
