Chorizo Pasta

You won’t see me post many pasta dinners for a few reasons: 1 we try not to eat too much pasta, 2 when we do eat pasta it is often for a cheat night dinner and 3 I feel like everyone is pretty good at making pasta so inspiration’s not really necessary. But this one is scrumptious and so easy to make that I’m pretty sure you will enjoy, and with our current isolation situation, a good cheat night meal is a comfort.

Mix it Up
I am using store bought sauce tonight because with all the cooking I do, I need a lazy night dinner every now and then but if you want to make the sauce from scratch check out my base recipe in the spag bol.
What you'll need
500g large pasta shells (conchiglioni)
1 red onion
2 chorizo sausages
1 packet of cherry tomatoes
2 x 400g jars of pre made pasta sauce with chilli (I used the providers brand)
A couple of handfuls of baby spinach
1/4 bunch flat leaf parsley
Fresh parmesan
From the pantry
olive oil
salt and pepper
Prep and Cook
Preheat Oven to 200c
Cook Pasta
Place a large pot of water on to boil with a pinch of salt.
Drop pasta into the boiling water and cook for 16 minutes. Stir regularly to avoid the pasta sticking to the bottom of your pot.
Roast
Slice chorizo into slithers and layout on a tray lined with baking paper.
Peel the onion and cut into wedges and spread out on the same tray. Sprinkle the cherry toms around then drizzle everything lightly with olive oil and sprinkle with salt.
Roast in the oven for 15 minutes.
Cook Sauce
Once your pasta is cooked drain into a colander, then I use that pot and tip my sauce in and bring up to the boil. When the chorizo and veggies are cooked add to the sauce. Return the pasta to the pot and season well with salt and pepper.
Plate it Pretty
Wash and roughly chop flat leaf parsley.
Mix the baby spinach through your pasta, serve into nice big individual bowls and sprinkle over the top with shaved parmesan and fresh chopped parsley. I also always like to add more fresh cracked pepper to the top, it looks pretty and pasta can always have more pepper if you ask me.

Pasta is a perfect reheat and eat meal, so long as you don’t get carried away and eat this all in one sitting as this is a scrumptious dinner and hard to resist.
