These have been a house favourite for a great many years, you can add all kinds of extras or keep them nice and simple.

Are exactly the same, just roll and wrap ready for tomorrow.

You can add all kinds of yummy extras....greek yog, smashed avo, chilli sauce the list is endless.

What you'll need

500g lamb mince

2 teaspoon paprika

1 teaspoon ground cumin

1/2 teaspoon cinnamon

1 small bunch of coriander

1 teaspoon salt

1 packet wholemeal Lebanese bread

1 store bought hummus

1/2 a cauliflower

1 bunch of curly parsley

2 tomatoes

1 lemon

Flat leaf parsley for garnish

Prep and Cook

Preheat oven to 180c

Make koftas

Wash and finely chop the leaves of the coriander. (if your bunch was very large save some of your coriander to sprinkle over the hummus)

Mix together really well with the lamb mince, spices and salt and pepper.

Roll into small balls. Traditionally these are long but I like them round, about the size of a golf ball. Layout on an oven tray lined with baking paper.

Bake in the oven for 15 minutes then check to see how cooked they are. Medium is perfect but that’s not to everyone’s liking so cook longer if you need (cooking time will also vary with size).

Make tabbouleh

Chop cauliflower down into florets and pulse in the food processor till crumbly.

Finely chop the parsley and add to the cauliflower.

Quarter your tomatoes and remove the seeds, then cut into a nice small dice, add to cauliflower.

Squeeze over the juice of 1 lemon and a splash of olive oil, a pinch of salt and pepper and mix together. This is good and zesty.

Toast Lebanese bread

Add Garlic

To add just a touch of xtra flavour you could rub a clove of garlic over the bread before you brush it with oil.

Brush the Lebanese bread with olive oil.

Heat a large non-stick frypan and lightly toast both sides of your bread transferring to serving dish as you go.

Plate it Pretty

Serve the cauliflower into a nice dish and place on the large platter alongside the bread.

Use a large spatula to make a pile of the hummus in front of the cauliflower then smear it out into a recent shape.

Pile the koftas up inside the empty space and garnish with remaining fresh herbs.
