This is a Friday dinner so we haven’t run with any leftovers however it would be super easy to do double the quantity as you go.
A Household Fave
This is an all time fave in my house. It started when I was pregnant when I couldn't handle eating anything cooked. Then it developed into a regular staple due to the freshness plus it’s such a simple way to end the working week.
What you'll need
2 carrots
2 stalks of celery
2 red peppers
1 cucumber
1 packet of cherry tomatoes
the other 1/2 bag of beans
the other 1/2 of your snow peas
hummus
red cabbage (whatever is left)
1 avocado
cheese of choice - I recommend grilled haloumi for a change
Optional Extras
toasted croutons
Optional: Make your own Hummus
Store bought is absolutely fine but if you want to make your own...
- 1 tin of chickpeas
- 1 tablespoon of tahini
- 1 clove of garlic
- olive oil
- salt and pepper
- fresh squeezed lemon
- some water
Put it all together
Peel, wash and chop your veggies……. or just chop. If you have leftover wraps, toast them up in the grill with a light brush of olive oil then sprinkle on some sea salt for added crunch.
Fridge clean out:
I like to do a clean out of the fridge when preparing my picky plate. Grab those opened jars that are on your condiments shelf or in the back of the fridge like olives, sun dried tomatoes and gherkins. Chuck that all on the plate too or throw them in a mixing bowl with any oiled cheese that’s in the fridge like feta or goats cheese.
