This is such an easy cheat night dinner - quick to whip up, delicious to eat and who doesn’t love pizza? I buy my pizza sauce in the squeezy bottle as it keeps really well in the fridge and we always have wraps and cheese in the house. Even if we don’t have all of tonight’s toppings, we generally have some kind of ingredients that can be added for a tasty emergency ‘I didn’t make it to the shop’ dinner.

Leftovers

If you are making enough to have for lunch - when the pizza is hot, fold it in half and you have more of a calzone which stops it from being dry and day old looking.

What you'll need

1 packet of gluten free wraps

1 x leggos pizza sauce

12 slices of fresh san daniele prosciutto

125g tub of bocconcini cheese

100g grated cheddar cheese

100g rocket

From the Pantry

Parmesan cheese

Sea salt

Wrap it up

Don't let your wraps go to waste. If you think you won't be using them again in a hurry, seal the bag or wrap them in cling wrap and put in the freezer for an emegency dinner option.


Prep and Cook

Preheat oven to 200

I call this a rolling dinner because we eat as we make. My oven is a touch old so you can do two at once in there but the top one will cook faster, so when the first lot go in I start making the next round.

Pizza Trays

It is so handy to own a couple of pizza trays, we use ours all the time. You can pick them up really cheap, Aldi often have them in store, so I highly recommend adding some to your kitchen essentials list.

Make

Lay out two wraps and spread over some pizza sauce leaving a slight edge.

Sprinkle lightly with cheese and a pinch of sea salt.

Slice bococinni into 4 pieces and dot over the pizza.

Place in the oven on pizza trays. Iif you don’t have trays pop them straight onto the oven rack.

Bake for 15 minutes or until cheese starts to bubble and the base is a little crispy.

Top

San daniele tends to be lovely and fat and long in length so I rip each piece in half lengthways and lay on top.

Then top with a nice large handful of rocket and grate fresh parmesan over.
