Tonight’s dinner is so easy to prepare because everything goes into the one pan. Which makes your washing up afterwards super easy, which makes it a winner.

Leftovers

I have added some extra veggies to your lunch xtra’s shopping list so you can make up a tasty salad for tomorrow.

What you'll need

2 pieces of salmon skin off, bone out approx 350g in total

1 bunch of asparagus

1 red onion

1 medley cherry tomatoes

1 lemon

200g green beans

1/2 a bunch of basil

100g pitted kalamata olives

Jazz Up The Leftovers

Add a few more veggies and some potatoes with some tinned tuna and you have yourself a nicoise salad. I often give the hubby carbs at lunch because your body has more time to use the efficiently durring the day.

From the pantry

olive oil

salt and pepper

Optional Extras for Lunch

1 bunch of asparagus

300g baby potatoes

100g green beans

100g olives

1 tin of tuna in oil

Feeding Four

I have added xtra salmon, asparagus,beans and cherry tomatoes to your list, you will want to use all the basil.


Prep and Cook

Preheat Oven to 180c

(If you are adding potatoes to your lunch, quarter them and put into a pot to boil with a pinch of salt. Remove and drain once cooked).

Prep Veg

This is the easiest dinner to put together.

Top and tail beans and throw into a mixing bowl.

Remove the stalk end from your asparagus and add to the bowl.

Peel skin off onion and slice into large wedges.

Cut the lemon in half and slice into thin half rounds, add to the bowl.

Add olives and tomatoes, pick your leaves off just half of your half bunch of the basil and again add to the bowl. (The rest of your half bunch you can use for garnish at the end).

Splash over with olive oil and season well. Toss together and layout on an oven tray lined with paper.

Pop in the oven for 5 minutes.

Cook Salmon

Rub your salmon with oil and sprinkle with salt and pepper.

Once your 5-minute timer has gone, remove your tray of veggies from the oven and lay your two pieces of salmon across the top.

Bake for a further 12 minutes.

Check salmon has cooked well enough for your liking, remove and rest.

Serve in separate bowls or eat straight off the tray with a squeeze of fresh lemon juice.

Lunch tomorrow

If you are having leftovers then you want to start boiling the potatoes when you start to prepare dinner and add all your extra veg to the oven tray, you’ll probably want to use a larger tray. Then set aside your lunch ingredients and add a tin of tuna when your ready to eat.
