Seeded slice

Be warned this is delicious!!!!

I got this recipe off my girlfriend Lucy but modified it just a touch, but it is very very moreish so watch you don’t smash the whole lot.

What you’ll need

1 1/2 cups rolled oats

1/2 cup coconut

1/2 cup sunflower seeds

1/2 cup sesame seeds

1/2 cup pumpkin seeds

1/3 cup chia seeds

1/2 cup cranberries

100g coconut oil

1/2 cup rice malt syrup or honey

1/4 cup soft brown sugar

From the pantry

1/4 tsp Maldon sea salt

I have a real sweet tooth so I do love a little sweet treat occassionally.... but I especially love a good "Guilt free" sweetie.


Prep and Cook

Pre heat oven to 1eighty

Toast dry ingredients

Combine oats, coconut and seeds all in a bowl and mix to combine.

Spread mix out evenly on an oven tray lined with paper.

Toast in the oven for 15 minutes, stirring regularly.

Melt wet ingredients

Combine coconut oil, syrup or honey and sugar in a small pot and bring up to a boil, allow to boil for 1 minute stirring occasionally but be very careful as it will be extremely hot.

Mix all together

Tip your toasted ingredients back into the bowl, add cranberries, salt and your wet mix and stir well to combine.

Press into a dish lined with baking paper.

Cut once cold and set.
