Simple Porridge

Serves: 2

simple porridge 1eightykitchen weekly recipe

I absolutely love porridge! and whilst it tends to be a winter dish, we happily eat it all year round.

Although it does drive my husband a little bit crazy cause I’m that person that will order porridge at a café for breakfast, even though I know its only costing them 50cents to make and they charge $18 for a bowl with a single piece of rhubarb…….. but hey you like what you like right.

When I eat porridge on the go it tends to just be plain porridge with a bit of honey, but if I have time I like to add in anything from chia seeds to peanut butter or even tahini can be a nice change, coconut and almonds will give you an extra boost of protein and fresh berries are always yum, but in all honesty I usually just shovel very basic porridge down my throat whilst on the go.

What you'll need

1 cup of quick oats

2 cups of water

1 large handful of chopped nuts

Fresh fruit such as figs, apples or blueberries

Drizzle of honey

From the pantry

pinch of salt

Steal cut whole rolled oats......

If your a little sensitive to wheat then go for a steal cut whole rolled oat. Personally I prefer the flavour and the texture.....but when you've got a little person at your feet wanting breakfast NOW quick oats are just so much easier.

Prep and Cook

Cook Oats

I don’t know if this even needs instructions……. but…..just incase

Put oats, water and salt in a microwave safe dish.

Cook for 1min 40sec.

Stir.

cook for another 1 minute 40 sec.

Serve in bowls topped with chopped nuts and honey and fresh fruit. I also like dried fruit.

Enjoy!
