Falafel wraps

I love making my own hummus and falafels but sometimes life is just too busy, so this is a nice quick dinner that uses store bought.

Leftovers

Lunch for tomorrow is exactly the same as dinner, and these wraps hold well so you can go ahead and wrap lunch up at the same time as dinner.

 

What you'll need

1 packet of soft greek pitas

1 packet of 8 store bought falafels

leaves saved from baby gem lettuce

2 carrots

1/2 tub of hummus

1 beetroot

1 cucumber

1/2 cup approx greek yoghurt

From the pantry

olive oil

salt and pepper

chilli sauce (optional)

 Optional Extras for lunch

You may need to include more falafels.

This is the perfect little dish to use up some of those stray veg that are floating around

Anything from tomatoes to the last of a leafy herb can be added or even cheese if you have some.


Prep and Cook

Prep all your veg components

 Wash and roughly chop lettuce.

Peel and grate booth your carrots.

Finely slice beetroot, and run under cold water to remove excess juice and stop the colour from running. Drain.

Peel long lengths off cucumber.

Fry falafels

Heat up a pan with around 2 tablespoons of olive oil. 

You’re almost shallow frying so there needs to be enough to generously coat the base of the pan. Use more if needed.

When your oil is hot, gently add your falafels and turn regularly. You want them to be crispy and golden on both sides but work quickly so they don't burn.

Keep turning till you’re satisfied they are hot right through.

Remove from pan and place onto a paper towel.

Build and Roll

Gently warm wraps in the same pan, just very quickly on each side.

Lay out flat and spread with hummous.

In the centre evenly build your veg in layers.

Now is the time to add in anything extra that you may have. We have loads of condiments so you can totally go to town here. I often put in pickled chillies and add garlic to my yoghurt or even a squeeze of lemon.

Top with the falafels.

Season with salt and pepper.

Tuck and roll.

If serving this to others it would look better served open and they can roll it themselves.
